Paleo Chocolate Chip Cookies
Ingredients
1/2 Cup coconut oil
3/4 cup coconut sugar
1 egg (preferably organic), room temperature
1 tsp vanilla extract
1/2 tsp sea salt
1/2 tsp baking soda
2 1/4 cups almond flour
1 cup chopped dark chocolate or carob chocolate chips
Method
- Preheat oven 350ºF
- Mix coconut oil and coconut sugar. Beat until smooth. Add egg and vanilla.
- Add almond flour, baking soda and salt to wet ingredients. Mix until well incorporated. Fold in the chopped chocolate or carob chips. Cover with plastic wrap and refrigerate for at least an hour.
- After refrigerating, form cookies and press down slightly. Bake for 10 minutes or until cookies being to turn golden around the edges.
