Mango Ice Cream
Ingredients
- 2 cups of organic vanilla yogurt or organic vanilla ice cream
- 2 pounds sliced frozen mango
- 2 cups Graham cookies
- 2 tbsp melted organic butter with no salt
- Little pieces of mango to decorate
- Leaves of fresh mint to decorate
Method
- Crush cookies mixed with butter in a blender, food processor or Vitamix.
- Place the mix in the bottom of parfait/ice cream cups.
- Make sure it stays compact (try using a spoon to do so)
- Blend mango slices in the Vitamin or food processor.
- Add ice cream or yogurt and mix slowly (Don’t over blend so it doesn’t melt)
- Serve in the cups previously prepared with the crackers.
- Decorate with little pieces of mango and mint leaves.
Serve immediately and ENJOY!
