Mango Ice Cream

Ingredients

  • 
2 cups of organic vanilla yogurt or organic vanilla ice cream
  • 2 pounds sliced frozen mango
  • 2 cups Graham cookies
  • 2 tbsp melted organic butter with no salt
  • 
Little pieces of mango to decorate
  • Leaves of fresh mint to decorate



Method

  • 
Crush cookies mixed with butter in a blender, food processor or Vitamix.
  • Place the mix in the bottom of parfait/ice cream cups.
  • Make sure it stays compact (try using a spoon to do so)
  • Blend mango slices in the Vitamin or food processor.
  • Add ice cream or yogurt and mix slowly 
(Don’t over blend so it doesn’t melt)
  • Serve in the cups previously prepared with the crackers.
  • Decorate with little pieces of mango and mint leaves.

Serve immediately and ENJOY!
